I’m usually in charge of acquiring the fresh lime juice for our house margaritas. I dislike the flavor of bad quality, store bought, heat pasteurized juices! As a result, I have made an annual trek to my local, authentic Mexican restaurant for the past 10 years to hunt down fresh lime juice for 50 of our equally passionate margarita fans that all demand a fresh, margarita made with only the best fresh, juice!
Lucky for me, our local delicious margarita haven, juices gallons of fresh lime juice by hand each day. Not so lucky for the employees or its owners, this is not easy to accomplish and takes hours per day to accomplish and usually involves lots of mess and lots of cleaning. I always wondered if that was the only solution for fresh lime juice. Why was it so necessary to juice on sight? Was there an alternative solution to this most problem?
Kim and I happen to have some history in the craft food world having previously started Kim and Scott’s Gourmet Pretzels, a micro-bakery that hand twists superior quality, delicately baked stuffed soft pretzels. So I knew what it might take to succeed in working with high quality, inspired products that were both innovative and solution focused. I thought there must be a way to solve this juicing problem with new Cold Pressed Juice Technology that had risen in the Consumer Market to preserve the fresh taste that is so important to delicious hand-crafted cocktails.
This lead me to traveling the country and the world to see just how such a problem could be solved. I met with top mixologists in Paris, Chicago, California and New York. I made the journey to as many craft cocktail bars as I could and spoke to these true beverage artists to find out what it would take to guarantee fresh quality juice for every cocktail. And, I wondered if I could actually improve the situation. With squeezing on premise, lime juice should be thrown away after 24 hours. Such a shame! I discovered in my research, that with technology, it would be possible to give life to fresh, cold pressed lime juice for days, not hours.
I was on a mission – called by the alchemist’s spirit – to find a solution. It took some time, but I finally found a way to help these artists fulfill their mission to bring great tasting, fresh handcrafted cocktails to the world.

We source only super premium, high quality fruit and squeeze, press and bottle on site. We then place our juice under very high pressure simulating 40 kilometers below sea level. This process is called High Pressure Pasteurization (HPP) and it works to maintain the juice flavors and stabilize all the healthy, great tasting and beneficial enzymes while neutralizing the harmful, damaging bacteria.
